Pineapple Coconut Energy Bars

I'm a fairly active person, and these homemade pineapple coconut energy bars are the perfect post-workout snack. They're gluten-free, nut-free, vegan, paleo-friendly and super easy to make. These tropical-inspired bars always give me those summer beachy vibes, with coconut and pineapple being my favourite flavours. Here are the deets.

1 1/2 cups chopped dates (pitted)
1 cup chopped dried pineapple
1 cup unsweetened shredded coconut
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
pinch sea salt
1 lime zest

Place all ingredients into a blender or food processor. Process together until the mixture is one big ball of dough. Press the dough into a pan lined with baking paper. Place into the fridge and chill for a few hours. Once chilled, cut into bars or bite-sized pieces. Store bars into an air-tight container in the fridge. Totally yum.
